Frescobene Sausage Ragu Stuffed Zucchini Boats

These delicious zucchini boats make the perfect entrée or cut into 4 bite size appetizers! The perfect “vessel” for our sausage ragu!
Serves 2-4 as a main or can be cut into 20 appetizer-size pieces
Ingredients:

2 medium size zucchini

1-10 oz. Frescobene Sausage Ragu, thawed

¾ c. shredded mozzarella cheese
Preparation:
Preheat oven to 375 degrees F.
1. Slice zucchini in half lengthwise.
2. Gently scoop out seeds.
3. Place zucchini halves in baking dish, cut sides up, and fill center of zucchini boats with Frescobene Sausage Ragu.
4. Top with shredded mozzarella.
5. Place in oven and bake until zucchini is soft and cooked through and cheese is bubbly and browned, approx. 25-30 minutes
