Escarole and Beans with Sausage Ragu

 This dish combines the richness of our savory sausage ragu with the delicate bitterness of escarole and the creamy texture of beans. It's a perfect balance of flavors that will warm you up from the inside out. Can be served as a main dish or a side.  

Serves 4

Ingredients

2 Tbsp. olive oil

1 glove garlic-sliced

1 15 oz. can cannellini beans

1/2-3/4 cup vegetable or chicken broth

1 10 oz. pouch Frescobene Sausage Ragu- thawed

1 large head Escarole-cleaned and cut into pieces

Salt & pepper to taste

Grated Parmigiano Reggiano

Hot red pepper flakes to taste (optional)

Preparation

Heat oil in a pan and add garlic.  Sauté for a minute and add cannellini beans, broth, sausage ragu and escarole.  Cover and simmer on low for 15 minutes.  Salt and pepper to taste. Before serving top off with grated cheese.
