Braised Pork Tenderloin, Farro and Amatriciana Sauce

This One-Pot Braised Pork Tenderloin with Amatriciana Sauce and Farro recipe is a hearty and flavorful dish that brings the comfort of Italian cooking straight to your kitchen!

Ingredients:
1 1.5-2 lb. pork tenderloin
2 Tbsp. olive oil
1/2 onion-diced
1 bell pepper-diced
2 garlic cloves-smashed
1 cup farro
2 cups chicken or vegetable broth
1 10 oz. pouch Frescobene Amatriciana sauce
2 cups baby greens
1/4 cup freshly grated Parmigiano Reggiano
Salt and Pepper
Heat oil in a pot, add pork tenderloin and brown on all sides.
Remove pork from the pan and set aside. Add onions, peppers and garlic and sauté for a few minutes. Add in farro, broth and Amatriciana sauce and stir to incorporate.
Add the pork back to the pot and cover with lid. Bake in a 375 degree oven for 25 minutes.
Remove pork from oven and let rest (5-8 minutes) on cutting board. Add greens to the pot and heat until wilted. Mix in Parmigiano Reggiano, salt, and pepper.
To serve, place farro and greens on a platter. Slice pork and add on top of the farro.
