Frescobene Sausage Ragu Lasagna for Two

This recipe is perfect for a weeknight Lasagna…and using the “no boil” noodles saves so much time!

Serves 2


  • 5 no-boil lasagna noodles

  • 1-10 oz. packages Frescobene Sausage Ragu

  • 4 oz. ricotta cheese

  • 1 c. shredded mozzarella cheese

  • 1/4 c. (plus more for serving) parmesan cheese (preferably Parmigiano Reggiano)

  • 1 T. unsalted butter


Preheat oven to 375 degrees F.

1. Grease a 9”x5” loaf pan

2. Spread a small amount of sauce in bottom of pan

3. Start assembling by placing a layer of noodles on the bottom, breaking pieces to fit, if necessary

4. Next spread a thin layer of ricotta, followed by a thin layer of sauce, then a thin layer of mozzarella cheese.  Continue layering and end with a layer of noodles

5. Dot butter on top of noodles and then sprinkle a generous layer of parmesan cheese on top

6. Refrigerate covered with foil until ready to bake.

7. Bake covered for 45 minutes, taking off the foil about half way through

8. If you like, serve with more Frescobene Sausage Ragu or Frescobene Marinara Sauce
