Chicken Thighs with Frescobene Vodka Sauce

A family favorite! Chicken thighs simmered in vodka sauce melts in your mouth and the little kiss of heat leaves you wanting more! It only takes one bite to fall in love with this dish!
1 -10oz Frescobene Vodka Sauce, thawed
1 1/2 lbs. chicken thighs
4 oz spinach
4 basil leaves chopped
1-2 T. olive oil
1/2 t. salt
1/4 t. pepper
1. In a large skillet heat olive oil on medium heat and season boneless skinless chicken thighs with salt and pepper.
2. Add them top side down to the hot skillet. Cook for 5 minutes on medium heat, until the top side is nicely seared.
3.Flip over to the other side and sear for 5 more minutes on medium heat.
4. Remove the chicken from the skillet to a plate. Add sauce to skillet and simmer. Add fresh spinach and fresh basil. Stir until spinach wilts.
5.Add the chicken thighs to the skillet, increase heat to medium. Reheat the chicken thighs in the sauce and simmer until the chicken is completely cooked through, 175 degrees.
Serve with rice and salad.
