Italian Eggs in Purgatory

Serves 2-3


  • 10 oz. Frescobene Amatriciana sauce or Sausage Ragu , thawed

  • 4 eggs

  • 4 slices toasted Italian bread

  • Salt and Pepper to taste


1.  Heat Amatriciana sauce in skillet and make "well" in sauce

2.  Crack eggs into well and salt and pepper

3.  Cover pan and cook until whites are set and yokes are runny

Serve with the toasted Italian bread
