Sauces & Wine Pairings


Amatriciana Sauce

Our Amatriciana sauce gets its depth of flavor from Italian pancetta, imported tomatoes, and Parmigiano-Reggiano cheese. Its flavor evokes the traditional cooking of Rome.  One bite will have you feeling like you are dining in Italy. Enjoy over pasta, seafood, grilled meats or as a topping for crostini!

Wine Notes: The Amatriciana has a beautifully delicate balance between umami, spice, and sweetness. You thus want to avoid wines that might knock it out of harmony. The Mauro Molino Dolcetto 2017 is a light yet dark-fruited red from the foothills of Piedmonte that can match the sweet/savory balance of the sauce while also not attempting to match it in terms of power. Serve it with a light chill, this red is both delicious in and of itself, while not taking anything away from the main attraction of the evening.

Sausage Ragu

Our best-selling Sausage Ragu perfectly embodies classic old world Italian flavor.  Slowly cooked sweet Italian sausage, red wine, imported tomatoes, Parmigiano-Reggiano cheese and rich cream give our Sausage Ragu its abundant flavor.  Enjoy with chicken, seafood, vegetables, and as a delicious addition to pizza.

Wine Notes: The Sausage Ragu has an intense layering of umami, and as such you want a wine that is both savory, yet texturally light and refreshing so as not to overwhelm the palate. Harmonizing together with the savory elements of The Sausage Ragu, the Bonavita Rosato Sicilia 2017 brings an herbal complexity as well as a tart blackberry lift, without excessive weight. A perfect pairing for a hearty sauce that won’t weigh you down.

Vodka Sauce

Our Vodka Sauce gets its savory flavor from a special blend of imported tomatoes, rich cream, a splash of vodka and a hint of heat.  The smooth and velvety texture makes it the perfect sauce for pasta, shrimp, and chicken.

Wine Notes: The Vodka sauce is lusciously creamy, and so to pair with this sauce you want a wine that has a similar intensity of richness, while also carrying the structure to cleanse the palate after each sip. The Fenocchio Barbaresco 2014 is beautifully aromatic, with notes of tart strawberry, fresh rose petals, and dark earth. The pleasantly creamy and savory aromas of the sauce are the perfect foundation to enjoy the complexities of the wine, while the wine is still youthful and angular enough to ensure that the sauce never starts to feel cloying. The two pair off like any great marriage, complementing each other's strengths while covering for each other's weaknesses.  

Marinara Sauce

Our traditional Marinara sauce is the recipe given to us by our Sicilian grandmothers. Never any artificial flavors or preservatives, we blend imported tomatoes, fresh garlic, basil, and onions for an authentic taste that would make our grandmothers proud. Enjoy over pasta, seafood, chicken and as a dipping sauce for mozzarella sticks, fried calamari, and freshly baked breadsticks.

Wine Notes: What better to pair with the classic Sicilian Marinara than a classic Sicilian wine? The freshness of the tomatoes here really demands a wine that mirrors those qualities, such as the Fuedo Montoni Nero d’Avola 2015.  Fuedo Montoni sits in the central highlands of Sicily, where the cool breezes keep their wines fresh and energetic. Their Nero d’Avola is at once light and casual in texture, yet layered with complex mineral and tart fruit notes. That contrast of lightness in texture yet complexity in flavor is the perfect simile to the Marinara.
